How to Make White Sauce Pasta Without Cheese!

You must have heard about the varieties of Pasta. Some of them are Red Tomato Pasta, White Sauce Pasta, Cheesy Macroni (Mac 'n' Cheese), Chinese Style Macroni and the list goes on. But today, I will be sharing the detailed Recipe for making delicious Italian Styled White Sauce Pasta without Cheese by using All Purpose Flour (Maida in Hindi) and some Milk. To be honest, the Italian White Sauce Pasta is made using Cheese but if you simply don't have some lying around, then this one works like a charm as well :p



Even without cheese it's texture is smooth and creamy. It can be made more flavoursome and aromatic by adding Oregano, Herbs and Garlic Powder. It is filled with veggies and Milk which is healthy and tasty at the same time. White Sauce Pasta can be served as an evening snack to your kids or can be served with Garlic Bread to your guests.

Ingredients for White Sauce:

1. All purpose Flour (Maida) - 1½ tablespoon
2. 2 tablespoon Vegetable Oil or Butter
3. Salt to taste
4. Black pepper to taste
5. Milk-  1.5L
5.Seasonings - Oregano, Herbs, Garlic Powder (optional)
6. Red Chilli Flakes (optional)

Ingredients for Pasta/Macaroni:

1. Water
2. Pasta (preferably, elbow shaped)- 4 to 5 cups
3. Salt to taste
4. Chopped Veggies (1/4th cup each of Capsicum, Boiled Corns, Onion, Broccoli, Carrots)
5. Vegetable Oil- 1tea spoon

Average time taken to prepare:
25 Minutes

Serving:
3 to 4 Person

METHOD

For white sauce
Take a pan and put vegetable oil or butter in it. Keep the flame at medium range. Let the oil heat for a bit and then add all purpose flour to it. Mix the ingredients properly. Then slowly start pouring Milk over the mixture. Make sure no lumps are formed during the process. Keep adding the required milk, while stirring the mixture. Cook the mixture until it's consistency becomes creamy and smooth.

Add salt and black pepper to taste. Also if you want to give a somewhat Italian-like flavour to your pasta, then you can put some oregano, red chilli flakes, herbs and garlic powder to the white sauce.

Note: If lumps are formed while adding Milk into the mixture then put the flame at the lowest and then mush all the lumps with the help of the spoon and keep stirring the mixture until all the lumps are gone.

For pasta

Take a utensil and add water almost double the quantity of pasta. Add half a tablespoon of vegetable oil to it and 1 tea spoon salt or according to your taste. Then add pasta to it and boil it till it becomes soft. Drain the water from the pasta when cooked. Keep the pasta aside for now.

Note: After draining the hot water from the pasta, wash the pasta with cold water so that it doesn't stick. The idea is to prevent it from becoming all mushy.

Take a pan add vegetable oil to it. Heat the oil and then add chopped onions and sautè them till they change color. Then add other chopped veggies according to your taste (capsicum, carrots, boiled sweet corn, broccoli, green beans etc.) and sautè the veggies for 2 to 3 minutes until they become soft. Then add the previously boiled pasta to it and stir the mixture properly. Now, add the White Sauce to the pasta and mix the ingredients in the pan properly. Keep cooking the Pasta for 2 to 3 minutes.
